Freshly dug Sunchokes/Jerusalem Artichokes. These do not have to be peeled. Theses are nice tubers and NOT the skinny ones you sometimes see on Amazon, etc. For planting I like to have 4 or more eyes per hill so I get higher production than if I only have one or two eyes per hill. Free shipping. I dig these the day they are shipped. These can not be shipped to Alaska and Hawaii. Do not order if you are from one of these states. These are grown in richly composted soils, without artificial chemicals. Some tubers grow to over 1 pound each. It is not uncommon to have 6-10 ounce tubers. Look at the photo. They are over 15 feet tall. Others in our neighborhood aren't even 10 feet tall. My soils have been chemical free since 1987. Excellent eating or for planting. Plant these now. I will send you growing and eating information with your order. Eating: Wash well. They DO NOT NEED TO BE PEELED. Slice and eat raw on salads or as snacks. We also like them lightly roasted. Just slice about 3/4 inch thick, rub coconut oil on them and then sprinkle with sea salt. Bake on greased pan at 400 degrees F for about 17 minutes. Longer or shorter time according to the texture you like. We don't like them mushy. We sprinkle more sea salt on top of them just before serving. Storing: will store in a plastic bag in the refrigerator for about 3 weeks. Store for months in a 5 gallon pail filled with dirt in a cool location. Just put a couple of inches of slightly damp soil in the bottom of the pail and then intermix artichokes and soil. Have a couple of inches soil as the top layer. The soil dampness should be the same dampness as if you dug into the soil about 6". Planting: Each node will form a new plant. Plant about 3-4 inches deep and about 2 feet apart. Preferable to plant in the fall or winter but OK up through the end of March. I prefer to have about 4 eyes per hill so I get 4 stalks per hill. They seem to produce more than if there are only one or two eyes per hill. I sell these every fall through mid December. After that the ground is frozen too hard to dig. I then sell them again in late March and early April
